From its inception, Ka’anapali separated and sold its coffee by botanical variety — the wildly fruity Moka, the quietly classic heirloom Typica, the crisply bright Yellow Caturra, and the complex red Catuai.
Furthermore, Ka’anapali processes coffee from each of these four varieties using two different methods: the wet process, which emphasizes the clean, bright aspects of each profile, and the natural dry process, emphasizing low-key complexity.
